Mastava (mastoba) is a kind of filling soup, a national Tajik dish. Sometimes called liquid pilaf.
Soup is always prepared using the roasting method typical for Central Asian cuisine, the same as some varieties of shurpa and radically different from the latter in the presence of rice. Mastava can only be made from rice and vegetables, but soup boiled in meat broth has become widespread.
